About Pelmeni

Pelmeni are Russian dumplings: thin unleavened dough of flour and water, sometimes with a little egg, wrapped around minced meat (usually pork, beef, lamb or a mix) seasoned with onion and black pepper. They are boiled in salted water until they float, then for a few minutes more, and served with sour cream, butter or vinegar, or in a bowl of broth.

What changes the numbers

  • Filling and brand. Fat depends on the filling and recipe. A frozen pork pelmeni label (32% pork) lists 239 kcal and 11 g fat per 100 g, while a US beef pelmeni label lists 204 kcal and 6.3 g fat. The 275 kcal this page uses describes a richer, fattier recipe; use the figures on your own pack when you have them.[3]
  • Sour cream or butter. Regular sour cream adds about 24 kcal per tablespoon (12 g), and richer smetana adds more. Melted butter adds considerably more per spoonful, while vinegar adds next to nothing.[4]
  • Boiled vs pan-fried. Browning boiled pelmeni in butter or oil adds some of the frying fat, so they end up higher in calories and fat than plain boiled ones.

How to log it

Count your pelmeni before boiling, or weigh them frozen and use the per-100 g figures on your pack, since piece weight varies a lot by brand. Log sour cream, butter or mayonnaise separately, and add broth only if you drink it.
