About Olivier salad

Olivier salad is a cold Russian salad. It combines diced boiled potatoes, carrots, pickled cucumbers, eggs and green peas with diced meat, dressed with mayonnaise. The meat is most often a boiled bologna-style sausage (Doktorskaya), though chicken or ham also appear. The version made with chicken instead of sausage is usually called Stolichny salad.

Also known as Olivye or Stolichny salad.

What changes the numbers

  • Amount of mayonnaise. Regular mayonnaise has 680 kcal per 100 g, so each extra tablespoon (13.8 g) stirred in adds about 94 kcal to the batch.[5]
  • Dressing-to-vegetable ratio. Two shop-bought versions sold under the same product name are labelled 142.5 and 205.4 kcal per 100 g, with 10.5 g and 17 g of fat. The richer one lists mayonnaise second among its ingredients; the lighter one lists it sixth.[3]
  • Lighter dressing. Sour cream has about 200 kcal per 100 g, against 680 for regular mayonnaise. Swapping some of the mayonnaise for sour cream lowers fat and calories per 100 g, while the potato, egg and pea base stays the same.[6]
  • Choice of meat. Boiled bologna-style sausage is fattier than boiled chicken breast. With the same amount of dressing, the chicken (Stolichny) version is lower in fat and calories.

How to log it

Weigh your portion rather than counting spoonfuls. For a homemade batch, save it as a recipe and weigh the mayonnaise you add: the amount of dressing is the main difference between versions.
