About Blini

Blini are Russian pancakes made from a pourable batter of wheat or buckwheat flour (or both) and milk. The batter is often yeast-raised and sometimes includes eggs, and each pancake is fried on its own into a thin round. You can eat them plain, with butter, or with sour cream, tvorog, meat, jam or caviar. In English, “blinis” often means small, thicker savoury cocktail pancakes.

Also known as blinchiki or Russian pancakes.

What changes the numbers

  • Butter on the stack. Blini are often spread with butter, which has 717 kcal per 100 g. A 5 g pat adds about 36 kcal and a tablespoon (14.2 g) adds about 102 kcal to the plain blin.[4]
  • Richer, crepe-style batter. More fat in the batter means more calories. USDA lists a plain crepe at about 224 kcal and 11.3 g fat per 100 g (about 146 kcal for a 65 g crepe), which is roughly double the fat of the lean plain blini this page is based on.[2]
  • Small cocktail blinis. Small, thick shop-bought blinis have more calories per 100 g than the 180 this page uses: one M&S pack lists 240 kcal per 100 g, so a 7 g piece is nearer 17 kcal than the 13 in the table above. Each one is light, so your total depends on how many you eat and what you put on top.[3]
  • Fillings and toppings. Sour cream, tvorog, minced meat, jam, honey or caviar all add calories on top of the blin. The values on this page cover plain blini only.

How to log it

Count or weigh the plain blini first, then log butter, sour cream, jam or filling as separate entries. If the stack was buttered, divide the butter used by the number of blini and log your share.
