About Okroshka

Okroshka is a cold soup from Russia, also eaten elsewhere in Eastern Europe. Diced boiled potato, hard-boiled egg, cucumber, radish, spring onion, dill and a cooked meat such as beef, ham or boiled sausage are covered with chilled kvass, a fermented rye-bread drink. Diluted kefir is a common alternative base. The soup is mixed just before eating, served cold and usually topped with sour cream.

What changes the numbers

  • Amount of kvass. Bread kvass is about 27 kcal per 100 g, with almost no protein and no fat. A bowl with more liquid and fewer solids comes out lower per 100 g.[3]
  • Kefir instead of kvass. Plain low-fat kefir is about 43 kcal per 100 g and has more protein and fat than kvass. Full-fat kefir raises the figure; thinning kefir with water lowers it.[4]
  • Sausage or chicken. A kvass recipe with 500 g of boiled sausage over 12 portions works out to about 80 kcal per 100 g. A kvass recipe with boiled chicken fillet comes to about 48 kcal per 100 g.[2]
  • Sour cream stirred in. One tablespoon (12 g) of regular sour cream adds about 24 kcal to the bowl.[5]

How to log it

Weigh the filled bowl, liquid included, and log the total grams under the entry that matches your base, kvass or kefir. Log sour cream or mayonnaise as a separate item, because the amount per spoonful varies.

How to calculate calories in Okroshka

Multiply the calories per 100 g by your portion weight, then divide by 100. For the reference 300 g portion, the calculation is:

60 × 300 ÷ 100 ≈ 180 kcal

Reference portion: bowl (300 g). This is an example amount, not a recommended portion. Weigh your food when possible: a cup, slice or piece can vary in size.

Check that the entry matches the food you have, including its preparation. If raw or cooked is not specified, check your label or a matching nutrition reference before logging it.
