About Vinaigrette salad

Vinaigrette salad (vinegret) is a cold Russian salad that is also popular in other post-Soviet countries. Cooked beets, potatoes and carrots are diced and mixed with chopped onion and brined pickles, sauerkraut or both. It is dressed with sunflower or another vegetable oil. Vinegar, which gave the salad its name, is often left out or replaced with pickle brine. Green peas or beans are sometimes added.

Also known as Ukrainian beet salad.

What changes the numbers

  • Oil in the dressing. Oil makes the biggest difference. A version with 15 ml sunflower oil per 177 g serving has 123 kcal and 8.5 g fat per 100 g, while a generic entry lists 80 kcal and 3.3 g fat per 100 g; protein and carbs are similar in both.[2]
  • Added beans. A 12-cup batch with two 15 oz cans of beans lists 196 kcal, 32 g carbs and 7 g protein per cup. A bean-free recipe with similar oil per cup lists 100 kcal, 12 g carbs and 2 g protein.[3]

How to log it

Weigh your portion instead of estimating by the cup; one database counts a cup as about 150 g. For homemade salad, measure the oil for the whole batch, and log any oil you add at the table as a separate entry.

Check that the entry matches the food you have, including its preparation. If raw or cooked is not specified, check your label or a matching nutrition reference before logging it.
