About Syrniki

Syrniki are small, thick pancakes made from tvorog, a curd cheese similar to quark. The curd is mixed with egg, flour, sugar and sometimes raisins, shaped into rounds, dusted with flour and pan-fried in vegetable oil or butter until browned on both sides. They are usually sweet and served for breakfast or dessert with sour cream, jam or melted butter.

Also known as syrnyky or cheese pancakes.

What changes the numbers

  • Frying fat or baking. Oil or butter the patties soak up in the pan adds to the total: 1 tablespoon (13.6 g) of sunflower oil is about 120 kcal. Baked syrniki, or ones cooked in only a thin film of oil, carry less added fat than shallow-fried ones.[4]
  • Sour cream, jam or butter. Toppings are not included in the per-100 g figure. Regular sour cream adds about 29 kcal per tablespoon (15 g); jam adds sugar and melted butter adds fat on top of that.[5]
  • Fat level of the curd. Full-fat tvorog gives a higher-fat, higher-calorie patty than the same recipe made with low-fat or fat-free curd.
  • Flour, semolina and sugar. A curd-heavy generic database entry lists 11.5 g of carbs per 100 g, while most packaged syrniki labels show 18–28 g. More flour or semolina, more sugar, raisins or a jam filling push carbs and calories up.[1]

How to log it

Weigh the cooked syrniki, or count pieces and pick the size closest to yours. Log sour cream, jam or butter separately, and add the frying oil if you used more than a thin film.
