About Vareniki

Vareniki (Ukrainian: varenyky) are boiled dumplings of wheat dough pinched into half-moons. The dough is usually unleavened, made with flour and water or milk, sometimes with egg. Typical fillings are potato, tvorog (curd cheese), cabbage, mushrooms, or cherries and other berries. They are served hot with sour cream, melted butter, fried onions or pork cracklings; sweet ones get sugar.

Also known as pyrohy.

What changes the numbers

  • Toppings and sauce. Sour cream, melted butter and onions fried in oil or pork fat add calories and fat that frozen-pack labels leave out. One Ukrainian catering card tops a 200 g portion (7–8 vareniki) with 20 g of sauce: 13 g of onion sautéed in pork fat (from 11 g onion and 10 g fatback) plus 7 g of sour cream.[4]
  • Dough-to-filling ratio. Wheat dough has more calories than potato, cabbage or fruit filling, so thick dough or a light filling raises the figure per 100 g. One frozen potato-mushroom label declares 50% dough and 50% filling; a Ukrainian catering card uses 82 g dough to 103 g filling.[3]
  • Type of filling. Tvorog (curd cheese) adds protein, plus fat if it is full-fat, while potato filling picks up fat from the oil or butter used to fry the onion. Cherry and other fruit fillings are usually sweetened, and more sugar is often added at the table.
  • Pan-frying after boiling. Boiled potato vareniki are sometimes fried in oil or butter afterwards. Boiled and frozen-label figures don't include that fat, so calories go up.[6]

How to log it

Weigh the boiled dumplings or count them: each one runs about 25–38 g. Frozen-pack weights are as sold, and boiling adds a little water. Log sour cream, butter and fried onions as separate entries.
